    Parmesan Crusted Fish Sticks are your kiddo's favorite comfort food, upgraded into a recteq version even the adults will love!

    Instructions

    • Step 1: Burning the recteq Cherry Pellets, preheat recteq to 450°F. Cut cod fillets into fish stick shaped pieces, making sure to keep them a consistent size so they all cook at the same time.  
    • Step 2: Start setting up your frying station by combining the All Purpose flour, 1 tablespoon Garlic Parmesan Rub (OR Chef Greg’s 4 Letter Rub), and 1 tablespoon Colden’s Freakin' Greek Rub in a shallow pan.
    • Step 3: In a small bowl, beat the eggs and set next to the pan. In another shallow pan, combine the breadcrumbs, parsley, butter, and parmesan cheese. Place next to egg bowl.
    • Step 4: Season the fish with 2 tablespoons Garlic Parmesan Rub (OR Chef Greg’s 4 Letter Rub) and then coat the fish lightly in the flour, dip in beaten eggs, and then roll in breadcrumbs.
    • Step 5: Make sure each fish stick is coated by covering completely and pressing firmly on them. Place fish in a greased sheet pan. Cook in recteq for 10 minutes then flip in pan and cook additional 8-10 minutes. 
    • Step 6: Remove, sprinkle with extra parmesan, season with 1 tablespoon Garlic Parmesan Rub (OR Chef Greg’s 4 Letter Rub) and serve with Ashley’s Wild Card White Sauce.
