Instructions

  • Step 1: Preheat recteq SmokeStone to 350ºF degrees or preheat a recteq with a griddle or cast iron skillet.
  • Step 2: Slice turkey breast across the grain in 1/2 inch cutlets.
  • Step 3: Place the cutlets between 2 pieces of plastic wrap and lightly pound with a meat mallet until about 1/4 inch thick.
  • Step 4: Season the cutlets with the Ben's Heffer Dust and bread them using standard breading procedure. Dip the cutlets in the flour, then egg, then breadcrumbs. Repeat until all the cutlets are breaded.
  • Step 5: Add the butter and oil to the preheated griddle, add the breaded cutlets, and cook for 4-5 minutes a side until golden brown and delicious and the internal temp is about 165ºF.
