Smoked Blueberry Upside Down Cake is bursting with flesh blueberries and epic recteq smoky wood fired flavor.

Instructions

  • Step 1: Preheat recteq to 350°F and allow the grill to come up to temp. Add brown sugar and 3 tablespoons of butter to sauce pan and place on recteq and whisk until butter melts and sugar dissolves. Remove sauce pan and place aside.
  • Step 2: Spray the cast iron skillet with non stick spray, then pour melted butter and sugar into cast iron, making sure mixture covers bottom. Add blueberries to cast iron skillet.
  • Step 3: Separate the yolks from the whites and set aside the yolks. Place the whites in electric stand mixer and whip until whites form stiff peaks. Remove from mixer and place in a bowl, keep cool.
  • Step 4: After you've cleaned mixer bowl, add sugar and butter and whip until well combined. Add egg yolks and vanilla and mix well. In another mixing bowl, add flour, baking powder, and salt. Mix well with whisk.
  • Step 5: Add flour mixture to batter, alternating with the milk. Mix well. Pour batter into cast iron skillet. Smooth batter out, making sure batter is evenly distributed.
  • Step 6: Place in recteq and bake for 55 - 60 minutes or until it's cooked all the way through. Remove from recteq and let cool for 15 minutes.
  • Step 7: Flip the cake, allowing cast iron to stay on top of cake for 10 minutes before removing. Serve and enjoy!
