Country Style Black-Eyed Peas

Ready to get down with a Southern-style meal? These flavorful, seasoned black eyed peas are a traditional New Year's day favorite. Simple and flavorful, they make a great addition to any meal. 


  • 32 ounces black-eyed peas, dry
  • 2 cups carrots, diced
  • 2 cups onion, diced
  • 2 cups celery, diced
  • 2 cups green bell pepper, diced
  • 1/2 pound country ham, chopped
  • 8oz butter
  • 96 ounces chicken stock
  • 1/4 cup Ben's Heffer Dust


  1. Pre-heat recteq to 400℉.
  2. Soak black-eyed peas in water overnight.
  3. Combine all ingredients in a metal baking dish, cook for 90 minutes until the peas are tender.

Serving Suggestion:

Serve these with some ham steaks and cornbread for a Southern-style lunch or dinner.
