Sweet Asian Smoked Jerky

Instructions
- Step 1: Burning the recteq Texas Blend Pellets preheat the recteq to LO(180°F).
- Step 2: Add all seasonings and liquids to a large mixing bowl and mix well.
- Step 3: Using your recteq Chef's Knife, slice the eye of round about 1/4 inch thick across the grain of the meat. Once all meat is sliced add it to the mixing bowl with the marinate.
- Step 4: Toss the meat in the marinade and let it rest for 2-4 hours in the fridge.
- Step 5: Remove the meat from marinade and place it evenly on the recteq Mesh Cooking Mats. Place the meat in the recteq and allow it to smoke and dehydrate for 3-4 hours.
- Step 6: Depending on how thin you slice your meat will dictate how long it takes to dehydrate. Start to check your jerky every hour until done. IF you bend it in half you should see the meat start to crack.
- Step 7: Remove from recteq and let rest for 15 minutes before serving. You can allow the meat to cool on the peach butcher paper to absorb any extra grease.
