Sweet and sticky Raspberry Pork Belly Burnt Ends are a unique treat that will steal the show!

Glaze

  • Step 1: Burning the recteq Cherry Pellets, preheat recteq to 325°F.
  • Step 2: Cube pork belly into 1.5 inch x 1.5 inch cubes.
  • Step 3: Season all pork belly cubes liberally with Rossarooski's Honey Rib Rub. Arrange cubes evenly onto a Mesh Cooking Mat and place on recteq. Cook for 1.5-2 hours.
  • Step 4: Divide smoked pork belly cubes into two recteq aluminum half pans with 1 stick of butter in each pan. 
  • Step 5: Cover pan with aluminum foil, and return to recteq for 1 hour, or until the pieces are tender.
  • Step 6: While burnt ends are finishing, make glaze. In a medium, grill safe, sauce pot add glaze ingredients and mix well.
  • Step 7: Return to recteq and heat until sugars have melted.
  • Step 8: Remove pan from recteq and discard butter. Cover burnt ends in glaze, return to Mesh Cooking Mat and place back in grill 5-10 minutes.
  • Step 9: Remove from recteq and let rest 5 minutes.
