Shredded Beef Tacos

We’ve got yet another way to serve Tacos that will be your family’s new favorite! The secret is slow smoke the beef in lots of spices, chilis, and a little beer for the best possible flavor before shredding it and piling on your favorite toppings. Delicious!

Ingredients

Beef Shoulder

  • 1 each (3-4 pound) Beef Shoulder
  • 1 each Bottle of Favorite Stout Beer
  • 1 each Can of Rotel® Tomatoes & Green Chilis
  • 16 ounce(s) Diced Roasted Tomatoes
  • 1 each Can of Diced Roasted Green Chilis
  • 1 each Yellow Onion, sliced
  • 1/4 cup(s) Worcestershire Sauce
  • 1 each Bay Leaf (optional)
  • 2 each(s) Garlic Cloves, finely chopped
  • 1 each Lime, juiced
  • 16 ounce(s) Beef Broth
  • 3 tablespoon(s) Olive Oil
  • 1 each Pack of Flour or Corn Tortillas
  • 1 each Taco Toppings of Your Choice

Rub

  • 1/4 cup(s) Black Pepper
  • 1/4 cup(s) Sea Salt
  • 3 tablespoon(s) Cumin
  • 3 tablespoon(s) Paprika
  • 2 tablespoon(s) Garlic Powder
  • 2 tablespoon(s) Onion Powder
  • 2 tablespoon(s) Ancho Chili Powder
  • 1 teaspoon(s) Cayenne Pepper

Tools Needed

  • Roasting Pan
  • Step 1: Place meat on the recteq at 250°F until an internal temperature of 165°F is reached.
  • Step 2: Mix ingredients for rub.
  • Step 3: In a roasting plan, combine the beer, sliced onions, Rotel, tomatoes, chilies, Worcestershire, chopped garlic, lime juice, beef broth, bay leaf, 2 tablespoons of beef rub, and a cup or two of water (ensure there is enough liquid to braise the beef).
  • Step 4: Place the beef in the liquid and place back on recteq at 350°F until an internal temperature of 203°F is reached, or when the beef is fork tender and easily shreds.
  • Step 5: Shred the beef in the braising liquid and serve with tortillas and toppings of your choice.
