Ingredients

  • 4 pound(s) 80/20 Ground Beef
  • 3 tablespoon(s) Ben's Heffer Dust
  • 2 tablespoon(s) Garlic Paste
  • 1/2 White Onion, grated
  • 3 tablespoon(s) Olive Oil
  • 1 cup(s) White Onion, diced fine
  • 1/2 cup(s) Carrots, diced fine
  • 1/2 cup(s) Celery, diced fine
  • 2 tablespoon(s) Garlic Paste
  • 1/4 cup(s) Flour
  • 3 tablespoon(s) Colden's Freakin' Greek Rub
  • 3 1/2 cup(s) Beef Stock

Tools Needed

  • Step 1: Preheat left side of DualFire to 375°F and the right side to 250°F, both burning the recteq Ultimate Blend Pellets. Place a cast iron skillet on left side of DualFire and allow them to come up to temp.
  • Step 2: In a mixing bowl, add ground beef, Ben's Heffer Dust, garlic paste, and grated onion. Mix well until fully combined.
  • Step 3: Form 8 ounce patties from beef mixture and place them on the right side of the DualFire. Let smoke until it reaches an internal temp of 145°F. Remove from grill and let rest.
  • Step 4: Add oil to cast iron skillet, then add onion, celery, and carrots and cook until onions start to become soft. Add garlic paste and mix into veggies well. Add flour and mix well with veggies until they are coated with the flour.
  • Step 5: Add Beef Stock and whisk until it's smooth and there are no lumps of flour. Season with Colden's Freakin' Greek Rub and bring to a simmer. Once simmering, add beef patties to gravy and let simmer for 15 - 20 minutes. Remove and serve.
