We've loaded up on the seasoning for this tri-tip recipe. Make sure to break out your Sear Kit, too, so you get that perfect seared crust on each of your steaks. There's no skimping on flavor with this recipe!

Instructions

  • Step 1: Preheat recteq to 250°F and place the Sear Kit on the right side of the grill, flat side up.
  • Step 2: In a small mixing bowl: add Chef Greg's 4 Letter Rub, Ben's Heffer Dust, rosemary, and kosher salt. Mix well.
  • Step 3: Coat both sides of the tri-tip with olive oil and then the rub.
  • Step 4: Place on the recteq, fat side up.
  • Step 5: Cook to an internal temp of 130°F. (About 1 hour)
  • Step 6: Remove tri-tip and wrap in foil, then increase recteq temp to 400°F.
  • Step 7: Place tri-tip onto the Sear Kit and sear each side for 4 minutes.
  • Step 8: Allow the meat to rest for 15 minutes and slice across the grain to serve.
