Smoked Lobster Rolls

Tender, perfectly smoked lobster piled in perfectly toasted buns…top it off with the perfect sauce and you’ve got a hit on your hands!

  • 2 pound(s) Fresh Lobster Tails
  • 8 tablespoon(s) Butter, melted
  • 1 tablespoon(s) Chef Greg's 4 Letter Rub
  • 1 teaspoon(s) Old Bay Seasoning
  • 1 cup(s) Celery Leaf, chopped fine
  • 1/2 cup(s) Celery, sliced
  • 1/4 cup(s) Shallot, sliced
  • 1/2 cup(s) Truffle Mayo
  • 1 teaspoon(s) Chef Greg's 4 Letter Rub
  • 1/2 teaspoon(s) Old Bay Seasoning
  • 3 tablespoon(s) Fresh Lemon Juice
  • 8 Top Sliced Hot Dog Buns
  • 4 tablespoon(s) Butter, melted
  • 1/2 teaspoon(s) Old Bay Seasoning

Tools Needed

  • Step 1: Burning the recteq Ultimate Blend Pellet, preheat your recteq to 275°F.
  • Step 2: With your chef knife, cut the lobster tail in half, pull the tail meat away from the shell but not out.
  • Step 3: In a small mixing bowl add melted butter, Chef Greg's 4 Letter Rub, and Old Bay. Mix well, the brush butter mixture on top of lobster meat.
  • Step 4: Place lobster in recteq shell side down, brush with remaining butter. Cook for 15-20 minutes. Then remove and allow to rest for 10 minutes. Rough chop meat and set aside
  • Step 5: In a medium size mixing bowl add, celery leaf, celery, shallots, mayo, Chef Greg's 4 Letter Rub, and Old Bay. Mix well. Add lobster meat and toss in mayo mixture.
  • Step 6: Brush buns with butter/Old Bay and place in recteq for 3-5 minutes. Remove and fill with lobster mixture and serve.
