Instructions
- Step 1: Season trout liberally on all sides, wrap tightly in plastic wrap, and allow the fish to cure in the fridge for at least 8 hours up to 24 hours.
- Step 2: Preheat recteq to LO, the bottom shelf of the Smokebox should be about 100ºF.
- Step 3: Add the trout to the Smokebox and cook for about 1.5 hours until the fish is 125ºF internal. For maximum flavor, allow the fish to cool on the counter for 30 minutes, then place covered in the fridge for a few hours.
