  • 4 Maine Lobster Tails
  • 1 tablespoon(s) Olive Oil
  • 1 tablespoon(s) Colden's Freakin' Greek Rub
  • 1 teaspoon(s) Chef Greg's 4 Letter Rub
  • 2 tablespoon(s) Smoked Garlic
  • 1 cup(s) Mayonnaise
  • 2 tablespoon(s) Fresh Basil, chiffonade
  • 1 Lemon
  • 4 ounces Butter
  • 4 Top Split Potato Buns
  • 4 ounces Butter Crisp Lettuce
  • Step 1: Preheat recteq to 500℉.
  • Step 2: Using a sharp knife, split the lobster tails in half lengthwise, season with the olive oil, Colden's Freakin' Greek Rub and Chef Greg's 4 Letter Rub.
  • Step 3: Prepare the basil aioli by combining the smoked garlic, mayonnaise, basil, lemon zest, and juice. Mix well.
  • Step 4: Grill the lobster, meat side down for 4 minute; flip and top with melted butter and cook for another 3-4 minutes until 135℉ internal.
  • Step 5: Allow the lobster to rest for a few minutes. Remove from the shell and chop in big chunks.
  • Step 6: Toast the top split buns.
  • Step 7: To build the Lobster rolls, add a generous amount of basil aioli & butter lettuce to the rolls.
  • Step 8: Two Delicious Options: A. You can tossed the chopped lobster in melted butter and fill the roll B. You can toss the lobster in more Aioli and then fill the roll.
