Maine Lobster Rolls

Instructions
- Step 1: Preheat recteq to 500℉.
- Step 2: Using a sharp knife, split the lobster tails in half lengthwise, season with the olive oil, Colden's Freakin' Greek Rub and Chef Greg's 4 Letter Rub.
- Step 3: Prepare the basil aioli by combining the smoked garlic, mayonnaise, basil, lemon zest, and juice. Mix well.
- Step 4: Grill the lobster, meat side down for 4 minute; flip and top with melted butter and cook for another 3-4 minutes until 135℉ internal.
- Step 5: Allow the lobster to rest for a few minutes. Remove from the shell and chop in big chunks.
- Step 6: Toast the top split buns.
- Step 7: To build the Lobster rolls, add a generous amount of basil aioli & butter lettuce to the rolls.
- Step 8: Two Delicious Options: A. You can tossed the chopped lobster in melted butter and fill the roll B. You can toss the lobster in more Aioli and then fill the roll.
