  • 1 pound(s) Bacon, sliced
  • 1 cup(s) Garlic Cloves
  • 1 cup(s) Parmesan Cheese, grated
  • 1/2 cup(s) Panko
  • 1/2 cup(s) Parsley, chopped fine
  • 1 each Side of Salmon, cleaned
  • 1 each Lemon, sliced

Tools Needed

  • Step 1: Preheat recteq to 375°F with a cast iron skillet inside.
  • Step 2: Place sliced bacon in skillet and render the fat out slowly, cooking the bacon 80% of the way done.
  • Step 3: While bacon is cooking, place garlic in small sauce pan and cover garlic with water. On stove top, bring water to a boil. Then, remove from stove and strain out the water.
  • Step 4: Repeat process two more times. After the last time, strain the water and cool the garlic down by placing ice on top.
  • Step 5: Once garlic is cooled, slice it and add it to a mixing bowl. Add bacon, parmesan, panko, and parsley to the garlic and mix well
  • Step 6: Place side of salmon on Mesh Cooking Mat, apply mixture to top of salmon, and place the mat in recteq for 45 minutes to one hour, cooking to an internal temp of 135°F. Remove from recteq and allow to rest for 10 minutes before serving.
