  • 2 pound(s) Ground Chicken
  • 2 Eggs
  • 4 tablespoon(s) Rossarooski's Honey Rib Rub
  • 1/2 cup(s) Panko
  • 3 tablespoon(s) Olive Oil
  • 8 slice(s) Bacon
  • 1 Red Onion, sliced
  • 1/4 cup(s) Sriracha Mayo
  • 4 slices White Cheddar Cheese
  • 4 Sandwich Buns

Tools Needed

  • Step 1: Preheat left side of DualFire to 500°F and right side to 250°F and allow it to come up to temp.
  • Step 2: In a large mixing bowl, add chicken, eggs, panko, and olive oil and mix until ingredients are well combined. Form chicken mixture into 4 - 8oz patties and place on right side of DualFire with the bacon.
  • Step 3: Allow chicken patties to smoke until they reach an internal temp of 120°F. Remove and place on right side of DualFire and allow to cook for 5 -7 minutes a side. Add red onion slices to left side of DualFire and grill until they start to char.
  • Step 4: Add cheese to top of chicken burgers and allow to melt. Remove burger and rest for 10 -15 minutes. Remove onion and bacon when it has rendered the fat and is 90% of the way done.
  • Step 5: Place buns on the left side of DualFire and toast for 1 - 2 minutes, then remove. Add sriracha mayo to bottom of buns, then grilled onions and burger. Top with bacon and buns. Serve and enjoy.
