    Ginger Pineapple Upside Down Cake

    Sweet and spicy Ginger Pineapple Upside Down Cake will take the cake when it comes to a dessert straight from the recteq.

    Instructions

    • Step 1: Preheat recteq to 350°F, place butter in cast iron skillet and put inside recteq to melt butter.
    • Step 2: In mixing bowl: add flour, baking powder, and salt and mix well. Set aside. Add brown sugar to melted butter and mix until sugar is dissolved. Remove cast iron from recteq.
    • Step 3: In the other mixing bowl, beat together shortening, sugar, and Jody's Asian Persuasion Rub until creamy. Add the eggs to bowl and mix well.
    • Step 4: Add half the dry ingredients to the eggs bowl. Add milk and mix until incorporated. Then add the rest of the dry ingredients. Add vanilla and mix until batter is smooth.
    • Step 5: Make sure pineapple is well drained, then evenly spread pineapple on the bottom of the skillet with ginger paste. Gently pour batter on top of pineapple and smooth the top.
    • Step 6: Bake for 50-60 minutes or until a toothpick can be inserted into the center of the cake and come out clean. Remove from recteq and allow to cool for 15 minutes. Turn on to platter and enjoy.
