Breakfast never tasted better! This twist on traditional banana bread will be your family's new favorite breakfast treat.

  • 2 cup(s) All Purpose Flour
  • 1 teaspoon(s) Baking Powder
  • 1/2 teaspoon(s) Salt
  • 1 cup(s) Sugar
  • 1/4 cup(s) Butter, softened
  • 2 Eggs
  • 3 Ripe Bananas, mashed
  • 1/4 cup(s) Yogurt
  • 4 tablespoon(s) Dark Rum
  • 1/2 teaspoon(s) Vanilla Extract
  • 1/2 cup(s) Sweetened Coconut
  • 1/2 cup(s) Powdered Sugar
  • 2 tablespoon(s) Lime Juice

Tools Needed

  • Electric Stand Mixer
  • Spatula
  • 9 x 5 Inch Loaf Pan
  • Non-stick spray
  • Step 1: Burning the recteq Ultimate Blend Pellets, set your recteq to 350°F and allow it to come up to temp.
  • Step 2: In a mixing bowl add flour, baking soda, and salt. Mix with whisk until well combined and set aside. In electric mixer, add butter and sugar and whisk until butter is creamy.
  • Step 3: Add eggs one at a time, making sure the first egg is combined before adding the next. Add bananas, yogurt, rum, and vanilla; whisk until well blended.
  • Step 4: Add flour mixture; whisk at low speed just until moist. Fold in 1/2 cup of shredded coconut. Spoon batter into a 9 by 5 inch loaf pan that has been sprayed with non-stick cooking spray. Sprinkle top with toasted coconut and place in recteq.
  • Step 5: Bake for 1 hour or until center is set and a tooth pick can enter the center of bread and comes out clean. Remove from recteq and let cool for 10 minutes before trying to remove it from the loaf pan.
  • Step 6: Remove and place on wire rack. Combine powdered sugar and lime juice and whisk together and drizzle over warm bread. Cool completely on wire rack.
