Irish Nachos with Guinness Gravy

This upgraded twist on traditional nachos combines crispy French fries, creamy Guinness gravy, and savory toppings to create a hearty appetizer that’s perfect for any occasion.
Instructions
- Step 1: Burning the Hickory Pellets, preheat recteq to 325°F.
- Step 2: Carefully core cabbage using Chef's Knife. Discard Core, but keep the end.
- Step 3: Place butter in cabbage cavity and season with Ben’s Heffer Dust.
- Step 4: Cover butter with cap and place cabbage in recteq. Cook cabbage 2-3 hours until tender. Remove and set aside.
- Step 5: Turn recteq to 425°F and add a cast iron skillet inside.
- Step 6: Spread fries evenly onto 18 inch x 26 inch baking sheet. Season with Ben's Heffer Dust and place in recteq. Cook 20-25 minutes until golden brown.
- Step 7: While fries are cooking make the Guinness gravy. Add butter to skillet, once melted combine flour to create roux. Cook roux until slightly browned. Stirring frequently.
- Step 8: Gently add room temperature Guinness and slowly stir. Once combined, add broth and slowly stir to combine. Once combined, cook 5-10 minutes until desired consistency is reached. Remove from recteq.
- Step 9: Build your nachos in a large platter. Start with French fries seasoned with Ben’s Heffer Dust, 6 oz shredded Irish cheddar, chopped cabbage or sauerkraut, shredded leftover corned beef, 6 oz shredded Irish cheddar, and top with gravy.
- Step 10: Return to recteq for 5-10 minutes to melt cheese.
- Step 11: Remove and finish with Thousand Island dressing and more Guiness gravy.
