Holiday Giblet Gravy

You can't go wrong with a holiday favorite, cooked low and slow on the recteq wood fired grill.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your grill to 225°F. Place your recteq Dutch Oven inside grill.
- Step 2: Place turkey giblets and neck in recteq and smoke for 30-45 minutes.
- Step 3: In the recteq Dutch Oven place: onions, carrots, celery, garlic paste, and Bacon Up. Cook until veggies start to become soft(about 25-30 minutes).
- Step 4: Add recteq's Smoked Salt, recteq's Black Pepper, and recteq's Cayenne Pepper. Mix well until well incorporated into other ingredients.
- Step 5: Add flour a little at a time, until it is all incorporated into the other ingredients.
- Step 6: Add chicken stock and using a whisk, mix the stock into the veggies. Turn heat on your recteq up to 375°F and bring stock to a simmer(for a smooth gravy be sure to whisk as gravy start to thicken).
- Step 7: Add bay leaf and Colden's Freakin Greek and let simmer for 45 minutes and remove from recteq. Allow to rest for 5 minutes before serving.
