Fried Bang Bang Shrimp

These bites of smoky goodness are tender, flavorful, and the perfect appetizer to start your meal with a bang!
Instructions
- Step 1: Burning the Hickory Pellets, preheat recteq to 400°F with a Dutch oven filled with 1 quart of oil.
- Step 2: In a small mixing bowl, whisk together all sauce ingredients. Taste and adjust for heat/sweet. Set aside.
- Step 3: In a large mixing bowl, combine batter and beer. Whisk well.
- Step 4: Once the oil in your Dutch oven hits 350°F (use a thermometer), you’re ready to fry. Working in batches, dip small amount of shrimp in batter mixture, coating evenly, and gently drop them into the hot oil. Fry for about 3-5 minutes, or until golden brown and crispy. Don’t overcrowd!
- Step 5: Use a skimmer or tongs to transfer shrimp to a wire rack or paper towels to drain.
- Step 6: While shrimp are hot, toss them in a large bowl with the bang bang sauce or serve the sauce on the side for dipping.
- Step 7: Garnish with green onion and a squeeze of lime.
