Chipotle Lime Sweet Potato Fries

These crispy, flavorful Chipotle Lime Sweet Potato Fries are the perfect balance of smoky, spicy, and tangy, the perfect addition to your recteq main course.
Instructions
- Step 1: Over stovetop, bring 8 cups of water to a boil in a large pot.
- Step 2: Cut peeled sweet potatoes into fry-like shapes.
- Step 3: Once boiling add prepped sweet potatoes and blanch for 2-3 minutes, stirring frequently.
- Step 4: Remove sweet potatoes and allow to dry on drying rack.
- Step 5: Burning the Apple Pellets, preheat recteq to 400°F.
- Step 6: In a large bowl, add adobo sauce, lime juice, chopped cilantro, Adam’s Southern Citrus Honey, and 1 tablespoon Ron's Screamin' Pig Rub. Whisk together and set aside.
- Step 7: In another bowl, gently add sweet potatoes and toss in olive oil. Season with 1 tablespoon Ron's Screamin' Pig Rub and place evenly on Mesh Cooking Mat. Don’t overcrowd—they need space to crisp!
- Step 8: Add to recteq and roast for 20-30 minutes, flipping halfway through. Look for charred edges and soft, fluffy centers. Grill time can vary slightly depending on how thick your fries are, but they should have a nice golden crisp when done.
- Step 9: Remove from recteq and add to bowl with sauce. Toss in sauce mixture, squeeze fresh lime juice on top and sprinkle extra cilantro for presentation and serve immediately.
