Tools Needed

  • Step 1: Preheat recteq to 350℉.
  • Step 2: Using a sharp knife, score through the side of the brie cheese wheel and then use butcher's twine to cut the brie in half, creating 2 thinner wheels.
  • Step 3: Top off the cut sides with the chopped craisins and pecans. Top with the other half of the brie and push together tightly.
  • Step 4: Brush the outside of the stuffed brie with the Shoot Yeah Mustard sauce and the Rossarooski's Honey Rib Rub.
  • Step 5: Lay the pieces of prosciutto to create a large square, place the brie in the center and then wrap in the ham.
  • Step 6: On a lightly floured surface, lay the sheet of puff pastry and use a rolling pin to flatten to an even, 1/8 inch thick.
  • Step 7: Place the brie in the center and then tightly wrap in the puff pastry.
  • Step 8: Brush the outside of the puff pastry with the egg wash and then place on a parchment lined baking pan.
  • Step 9: Add the wrapped brie into the recteq for 35-40 minutes until golden brown and the cheese has melted.
