Ready to grill beyond the beef? Here's a Smoked Rabbit Stew recipe that is savory and smoky for a delicious alternative to mix things up on the menu!

Instructions

  • Step 1: Preheat recteq to 400ºF with a 7 quart Dutch Oven.
  • Step 2: Season the rabbit with Colden's Freakin' Greek Rub and Chef Greg's 4 Letter Rub.
  • Step 3: Add to the recteq and cook for 20 minutes until well-roasted in color.
  • Step 4: In the Dutch Oven add the onion, carrot, and celery and alow to roast in the pan. Once the vegetables are slightly tender, add the garlic and tomato paste and cook for 8-10 minutes.
  • Step 5: Add the red wine and chicken stock to the Dutch Oven and allow everything to come to a simmer. Finally, add the rabbit and allow the meat to stew until tender; about 75 minutes.
