Whole Grilled Red Snapper

Looking for healthy and quick fish recipe? This simple Whole Grilled Red Snapper with lemon and herbs is the perfect recipe for your wood pellet grill.


  • 1 whole red snapper, cleaned and trimmed
  • 1 lemon, sliced
  • 3 sprigs fresh thyme
  • 1 tablespoon Colden's Freakin' Greek Rub
  • 1 tablespoon olive oil


  1. Pre-heat recteq to 425°F.
  2. Trim fish to remove gills, fins, and scales.
  3. Cut open bottom of fish for cavity to add the lemon and herbs.
  4. Cut 3 slits across the skin and flesh of the fish to help cook evenly.
  5. Season the fish with Colden's Freakin' Greek Rub and olive oil.
  6. Cook the fish at 425°F for 8-10 minutes per side (this will be longer if the fish is larger).
