Grilled Scallops with Citrus Avocado Salad

Tender and sweet, sea scallops make for a beautiful appetizer or side. The bright flavors of the citrus avocado salad really set off this dish.

Instructions

  • Step 1: Preheat recteq to 500ºF or FUL with the Sear Kit lying flat side up.
  • Step 2: In a medium sized bowl, combine the chopped grapefruit, avocado, lime, shallots, basil, chili, and Ben's Heffer Dust. Gently toss and set aside.
  • Step 3: On a plate lined with paper towels, remove the side abductor muscle from the scallops and discard. Using a separate towel, pat the tops of the scallops dry.
  • Step 4: Lightly season the scallops with olive oil and Rossarooski's Honey Rib Rub.
  • Step 5: Add scallops to preheated Sear Kit and cook for 2-3 minutes per side or until the scallops have a good crust and are cooked through.
  • Step 6: Let the scallops rest for 2-3 minutes prior to serving alongside the salad.

  • 1/2 each Red Chili, diced medium
  • 1/2 tablespoon(s) Ben's Heffer Dust
