  • Step 1: Use the recteq DualFire and the Ultimate Blend Pellets set your temp on the direct side to 375°F, and the indirect side to LO(180*F).
  • Step 2: Place shortening in recteq Cast Enamel Dutch Oven. Place recteq Dutch oven on direct side of grill and allow it to reach temp of 350°F.
  • Step 3: In a large mixing bowl add wings, Chef Greg's 4 Letter Rub, and Chef John's Soul Powder Rub. Mix well until all wings are covered with seasoning. Let rest for 5-10 minutes before placing it on the recteq.
  • Step 4: Place wings on indirect side of recteq and smoke until wings reach an internal temp of 100°F - 110°F. Remove all the wings and place on cooling rack.
  • Step 5: Once shortening has reached 350°F, add wings in batches, 4 - 5 wings at a time into the shortening. Fry until wings reach an internal temp of 175°F.
  • Step 6: Remove from recteq and place in a clean mixing bowl, season with Chef John's Soul Powder as wings come out of the shortening.
  • Step 7: Let rest for 5 minutes and serve.
