Smoked Brisket Philly "Pizz-anwich"

Somewhere between a pizza and a sandwich you'll find this savory, melty, smoky recteq "Pizz-anwich".
Instructions
- Step 1: Preheat recteq to 500℉ with a Pizza Kit and a Cast Iron Skillet Plate.
- Step 2: Once preheated, add the onions and peppers to the skillet plate and lightly caramelize top with the slice of brisket and allow to warm up. Remove from the oven.
- Step 3: Stretch the dough into a 12 inch circle, brush with olive oil and fold in half. Add to the pizza kit and cook for 6 minutes until just golden brown. Remove the dough from the oven.
- Step 4: Open the Pizz-anwich and fill with the hot onion, peppers & brisket. Top with mozzarella cheese, BBQ sauce, Colden's Freakin' Greek Rub, and Chef Greg's 4 Letter Rub, then close the dough and add back to the pizza oven to continue cooking. Let the cheese melt for about 3-4 minutes.
- Step 5: Remove from the pizza oven and enjoy!
