Laziza Pita Gyro on the SmokeStone

Created by Nader Khatib from Laziza Mediterranean Grill in Evans, this SmokeStone Gyro is a delicious homage to a Mediterranean classic.
Instructions
- Step 1: Burning the recteq Ultimate Blend Pellets, preheat your SmokeStone to MED HI.
- Step 2: In a large mixing bowl add onions, parsley, garlic, pepper, salt, pepper paste, and Chinese 7 Spice. Mix well.
- Step 3: Add beef to the mixing bowl and mix well with spices. Make 4 equal balls out of beef mixture. Spread balls evenly across pita.
- Step 4: Place pita meat side down on SmokeStone. Cook for 8-10 minutes then flip and cook for another 3-5 minutes. Remove from SmokeStone.
- Step 5: Top with tomatoes, pickled onion, and Tzatziki. Cut each pita into 1/4 and serve.
