Chicken and Dumplings

Down home comfort food with a hint of smoke, these Chicken and Dumplings will be a hit for the whole family.

Step 1: Burning the recteq Texas Blend pellets, preheat the recteq bullseye to 400ºF with the Matador Pan inside.
Step 2: Pour in 1 gallon of chicken stock and allow to simmer. Add shredded chicken and Colden's Freakin' Greek Rub to Matador while you make your dough.
Step 3: In a large mixing bowl, add flour and baking powder. Mix well and add butter, cutting it into the flour mixture using a fork.
Step 4: Once fully integrated, slowly add in 1.75 cups of the milk, reserving .25 cup, just in case the dough is dry after mixing.
Step 5: Flour the table and work by hand to get good consistency and then let dough rest for a few minutes.
Step 6: Roll out the dough using a rolling pin or wine bottle. Cut into small dumplings and add these to the boil. Let cook for 20 to 25 minutes, stirring occasionally. Plate and enjoy!
