Grilled Cauliflower Steaks and Portobello Mushrooms

Charred cauliflower steaks and mushrooms are grilled to perfection and topped with a garlicky, lemon-herb breadcrumb crumble and parmesan.
Instructions
- Step 1: Preheat X-Fire Pro to high on Grill Mode, with a small cast iron skillet.
- Step 2: Using a sharp knife, cut the cauliflower into 4- 1.5 inch thick steaks. Use a spoon and scoop out the gills on the underside of the mushrooms. Add both to a small baking tray.
- Step 3: Spray the veggies with olive oil spray and season liberally with the Colden's Freakin' Greek rub.
- Step 4: Add the veggies to the X-Fire Pro and allow to sear well and develop a nice char.
- Step 5: In the cast iron skillet add the olive oil and garlic cloves and allow them to sauté for 1-2 minutes. Add the bread crumbs, parsley, and lemon zest. Allow to sauté for 1-2 minutes, remove from the grill.
- Step 6: Once you flip the veggies over, add a heap of the toasted bread crumb mixture on the top and a sprinkle of parmesan cheese.
