Cajun Scallops with 4 Letter Rub Butter

Perfectly seared Cajun-spiced scallops finished with butter and fresh parsley for a rich, flavorful bite.
Instructions
- Step 1: Preheat recteq wood pellet grill with a cast iron sizzle pan.
- Step 2: Dry the scallops with a paper towel. (Any moisture and the scallops won't sear well). Season the scallops with the Cajun rub and Chef Greg's 4 Letter Rub.
- Step 3: Add the scallops in an even layer on the cast iron skillet, allow the scallops to sear on one side for 2 minutes.
- Step 4: Flip the scallops over, add the butter and parsley and allow to cook for 1-2 minutes until the scallops are just cooked.
