Grilled Chipotle Chicken al Pastor Skewers

Smoky chipotle–pineapple marinated chicken thighs are grilled for a bold, sweet-and-spicy Chicken al Pastor–inspired dish.
Instructions
- Step 1: In a blender, combine the chipotle peppers & adobo, olive oil, coriander, chili powder, Ray's Loo Gringo, and pineapple juice. Puree until smooth.
- Step 2: Cube the chicken thighs into golf ball sized chunks and add to a medium sized bowl. Toss in the prepared marinade and allow to marinate in the fridge overnight or at least 2 hours.
- Step 3: With a sharp knife, peel the pineapple and slice into 1/2 inch wide chunks.
- Step 4: To assemble the skewers, take a large metal recteq skewer and alternate the marinated chicken and pineapple chunks.
- Step 5: Preheat recteq X-Fire Pro on Grill Mode to High with both burners.
- Step 6: Grill the chicken for 8-10 minutes until the chicken temps over 165ºF and the outside is well charred. Remove from the grill and garnish with chopped cilantro.
