March Madness – But let’s make it easy!
March 17, 2026

Chef John’s greatest ideas for a March Madness Menu that’s as delicious as it is simple.
March Madness is pure chaos in the best way—buzzer beaters, brackets busted by lunchtime, and a living room full of loud opinions. If you’re hosting a watch party, the real MVP isn’t your streaming setup… it’s the food. And when you’ve got a big crowd of hungry basketball fans rolling through, a pellet grill is basically your cheat code. It lets you cook a ton of food at once, keep it hot between games, and lay down that wood-fired flavor that makes even a simple snack taste like championship material.

For the main event, go big and go crowd friendly. Smoked pulled pork is a slam dunk: throw on a couple pork butts early, let them ride low and slow, then pile the meat onto slider buns with slaw and pickles. Brisket queso is another fan favorite—smoke a block of queso dip with browned sausage, jalapeños, and Rotel until it’s bubbling, then serve it straight off the grill. Want something fast between tipoffs? Wings are always undefeated: smoke them first for flavor, then crank the heat to crisp them up and toss in a few sauces so everyone can pick their team.
Mains for March Madness
Sides win championships too. Load up the pellet grill with smoked mac and cheese, baked beans, or jalapeño poppers—easy to prep, easy to serve, and they hold well all day. For a snack table that doesn’t quit, add smoked chex mix, grilled nachos, or even a tray of shotgun shells (stuffed manicotti tubes wrapped in bacon) for a bite-sized BBQ flex. The best part is you can rotate pans in and out without ever losing that smoky aroma that keeps people hovering around the grill like it’s the scoreboard.
Sizzling Sides for Every Game
And don’t forget dessert—because every tournament run needs a strong finish. Smoked peach cobbler or bourbon bread pudding coming off the recteq is a killer way to close out the night, especially when the games go late. March Madness only comes once a year, so feed your crowd like it’s the Final Four: big flavors, big portions, and plenty of wood-fired goodness. Because if your bracket falls apart, at least your BBQ won’t.
Finish Strong with Sweet Treats
And that’s all you need to ensure your March Madness is a win - at least from a menu perspective. Fill up your hopper, set the temp, sit back and get ready for a truly great game!
