A St. Patrick’s Day feast should feel warm, inviting, and most importantly shared amongst friends and family. St. Patty’s Day Favorites from your recteq
Corned beef is the heart of any St. Patrick’s Day meal and smoking it on a pellet grill completely transforms the experience. Instead of boiling away flavor, low-and-slow smoke builds richness, tenderness, and complexity. But the most important step is to soak the corned beef in ice cold water, changing it a few times to leach out the excessive salt and cure. Trust me, DO NOT SKIP this vital step. After soaking the corned beef to reduce excess salt, a simple seasoning of Ben’s Heffer Dust allows the natural flavor of the beef and wood smoke to shine. Cooking low and slow creates a tender, juicy texture with a subtle smoky finish that elevates the dish without overpowering it. You can even add the smoked corned beef to a large Dutch oven, with potatoes, root vegetables and allow it to simmer with some chicken stock and Guiness beer for an amazing braised dish. Quite frankly it’s my favorite way to do it. This becomes more than a main course — it becomes the centerpiece of the entire feast.
Irish Traditions with a Smoky Spin
Put your chef hat on for a minute and what about a mashup of sorts. Guiness Style Smoked Burnt Ends… yeah you read that right and go ahead and wipe the drool off your chin. Instead of wrapping the brisket point or chuck roast up like you would normally do, what about some whole grain mustard, Guinness beer, caramelized onion, brown sugar and of course black pepper. Take familiar foods, family favorites, and transform them into new cultural classics. That’s the best way to celebrate the luck ‘o the Irish this year!
