Perfect for BBQ season, this Jalapeño Pineapple Coleslaw is a delicious, slightly spicy contrast to rich, smoky pulled pork or ribs.
Instructions
- Step 1: Create the slaw by combining cabbage, carrots, pineapple, jalapeños, and cilantro in a large bowl.
- Step 2: Toss slaw with poppy seed dressing, starting light with about 3/4 a cup, and adding as needed. Toss until coated.
- Step 3: Chill the slaw in the refrigerator for 30–60 minutes so flavors blend and the slaw softens slightly.
- Step 4: Taste and adjust as needed: more lime for brightness, more jalapeño for heat.
