Delicately charred and deliciously seasoned, this Grilled Romaine is a refreshing take on your same old salad.
Instructions
- Step 1: Slice the romaine hearts in half lengthwise, keeping the root intact so the leaves stay together. Lightly brush the cut side with olive oil and season with salt and pepper.
- Step 2: Preheat your recteq to 450°F.
- Step 3: Place the romaine cut-side down directly on the grill grates. Grill for 2–4 minutes until lightly charred with crispy edges but still fresh in the center.
- Step 4: Chef Tip: Don’t overcook the romaine. You want smoke and char—not soggy lettuce. The center should still have a fresh crunch.
- Step 5: Transfer to a platter and drizzle with Caesar dressing. Top with Parmesan, croutons, bacon bits, and a squeeze of fresh lemon juice.
