Crispy parmesan garlic potato wedges cooked on the recteq deliver the perfect balance of smoky flavor, golden crunch, and savory goodness.
Instructions
- Step 1: Prep the Potatoes by washing and cutting potatoes into thick wedges.Soak them in cold water for 20–30 minutes if you want extra crispy wedges. Drain and dry completely with paper towels.
- Step 2: In a large bowl combine: Olive oil, Garlic powder, Fresh garlic, Paprika, Salt, Pepper, Colden's Freakin' Greek Rub, and Cornstarch. Toss potatoes until fully coated.
- Step 3: Set your recteq to 425°F using: Ultimate Blend Pellets for balanced flavor or Apple Pellets for a lighter finish. Place wedges directly on a grill-safe tray or cast iron pan.
- Step 4: Cook for 35–45 minutes, flipping halfway through. During the final 5 minutes: Sprinkle parmesan heavily over the wedges. Let it melt and crisp onto the potatoes.
- Step 5: Pull wedges from the grill when: They reach a deep golden brown, crispy edges, and tender inside. Top with: Fresh parsley, Extra parmesan, and optional red pepper flakes.
