WyldSide Grilled Octopus


  • 1 octopus

Poaching Liquid:

  • 1/2 gal water
  • 3oz salt
  • 1/2 bottle of dry white wine
  • 2 bay leaves
  • 2oz garlic, crushed
  • 2oz ginger, crushed
  • 2 kaffir lime leaves

Asian Glaze:

  • 8oz hoisin
  • 1 tsp crushed red pepper
  • 3oz rice wine vinegar
  • 4oz ginger
  • 2oz sesame oil


  • Build a medium fire in your WyldSide.
  • In a large stock pot, combine poaching liquid ingredients and bring to a simmer.
  • Place octopus in water and let poach for 45 minutes to an hour.
  • Once octopus is is tender, remove from poaching liquid and allow to cool.
  • Combine ingredients for Asian glaze and mix well.
  • Brush the octopus with glaze and grill until heated.
