WyldSide Grilled Octopus
Ingredients:
- 1 octopus
Poaching Liquid:
- 1/2 gal water
- 3oz salt
- 1/2 bottle of dry white wine
- 2 bay leaves
- 2oz garlic, crushed
- 2oz ginger, crushed
- 2 kaffir lime leaves
Asian Glaze:
- 8oz hoisin
- 1 tsp crushed red pepper
- 3oz rice wine vinegar
- 4oz ginger
- 2oz sesame oil
Instructions:
- Build a medium fire in your WyldSide.
- In a large stock pot, combine poaching liquid ingredients and bring to a simmer.
- Place octopus in water and let poach for 45 minutes to an hour.
- Once octopus is is tender, remove from poaching liquid and allow to cool.
- Combine ingredients for Asian glaze and mix well.
- Brush the octopus with glaze and grill until heated.
