Pulled Pork
Ingredients:
- 1 x 8-9lb. pork shoulder
- Yellow mustard
- 1 tbsp molasses
Rub:
- 1/2 cup kosher salt
- 1/2 cup paprika
- 1/2 cup chili powder
- 1/2 cup brown sugar
- 2 tsp celery seed
- 4 tsp black pepper
- 2 tsp ancho chili pepper
- 4 tsp ground mustard
- 2 tsp cumin
- 3 tbsp garlic powder
- 3 tbsp onion powder
Mop:
- 2 cups vegetable oil
- 2 cups apple cider vinegar
- 4 cups of apple juice
- 2 tbsp Worcestershire sauce
- 2 tbsp soy sauce
Carolina Style BBQ Sauce:
- 1 cup apple cider vinegar
- 2 tbsp blackstrap molasses
- 1 tbsp ground mustard
- 1/2 cup butter
- 1/2 tsp cayenne pepper
Instructions:
- Cover the pork shoulder with mustard and molasses mixture.
- Mix ingredients for rub.
- Cover shoulder generously with rub.
- Heat recteq to 225ºF and place on grill.
- Brush with mop every hour..
- Cook until internal temperature reaches 195-200ºF (meat should pull apart).
- Mix ingredients for Carolina BBQ sauce and serve alongside pulled pork.
